Organic Sicilian Lentils or Lenticchie
These small lentil are more of a brownish green in hue and slightly larger than the other smaller varietal from Terre di Entella.
Grown in the heartland of Sicily unique clay and volcanic soils where Terre di Entella has been rotating lentils with along their heritage wheats. The cultivation of legumes in organic farming is a practice of fundamental importance for the renewal of soil fertility without the use of synthetic fertilizers which plays a fundamentally important ecological role in the best farming practices.
These lentils are earthy and delicate in flavor and texture. They hold their shape well, excellent in soups with vegetable such as carrot, fennel and celery as well as an addition to certain pasta dishes.
