Eggplant Caponata is a classic sweet and sour Sicilian side dish made with fried eggplant, green olives, onion, celery and capers a bit of sugar and vinegar and tomato. This Caponata is perfectly balanced not to sweet nor too acidic. Campo d’Oro uses capers sourced from Pantelleria a small island off the southwest coast of Sicily known for their capers. The IGP or PGI designation when seen is given from the Italian government as a designation reserved for authentic products sourced and produced in a protected geographical region.
Caponata is delicious when served simply on warm bread or as part of an appetizer or cheese board or as an accompaniment for grilled fish and meats.
