These handmade, crunchy biscuits or cookies are simple, delicious and perfect in the morning or with afternoon coffee. Made in the picturesque medieval town in Castelbuono, Sicily, with a blend of local ancient wheat varietals Timilia or “Tumminia” and Maiorca flours, olive oil, butter and free-range eggs and natural cane sugar.
The highlight of these cookies are of course the ancient grain flours. The blend of both the darker Tumminia flour and the finely ground texture of the softer wheat varietal, Maiorca is ideal for baking preparations. Slightly dark in color with a nutty flavor profile which comes from the Tumminia and the lovely finer crumb texture from the Maiorca. They also come with the benefit of these ancient grains which are naturally higher in nutritional value, protein and lower in gluten.
