Terre di Entella present their artisanal and organic pasta from Sicilian heritage wheat variety, “Perciasacchi” which is grown, harvested and milled in the heartland of Sicily. Owing its name — “pierced sack” to the pointed shape of wheat that pierced the jute sacks in which the grain was contained during transport. This flavorful varietal is nutrient rich as well as easily digestible. Grown, harvested and milled in the heartland of Sicily with biodiverse farming practices. The pasta is bronze extruded and slow dried in accordance with traditional practices to produce best quality pasta from the seed to the table. ‍ ‍Packaged carefully in little nests which makes it ideal for portioning while cooking.

Pappardelle are widespread throughout Italy and are especially excellent in preparations with wild meat and game sauces. They are also recommended in recipes that are tomato sauce based, as well as creamier sauces including cheeses which are fantastic for this type of long, flat pasta shape.

Pappardelle with meat sauce or ragu is the most classic of recipes- some variations paired with this type of pasta would be with wild boar ragu or a classic sauce preparation with Pappardelle al Telefono with the addition of fresh mozzarella adding a long cord like shape when it melts into the pasta which is inspired by a classic telephone wire (telefono).
