This heirloom and low-gluten varietal wheat is grown, harvested and stone ground by Terre di Entella in the heartland of Sicily. This whole wheat varietal lends a nut like flavor profile which adds a lovely depth of flavor. Also bronze extruded and slow dried creating a rough surface on the pasta making it a perfect vehicle for any sauce that it is paired with.
