Red Pepper - Peperoncino Flakes Organic dried peperoncino from the unspoiled Sicilian Madonie mountain reserve. Harvested in Summer and Autumn. Picked and dried at its peak. The Filippone family uses methods that respect the land and environment— using growing and weeding processes that follow organic guidelines and in accordance with the original roots preserving this rural tradition.

Wild Fennel Seeds- Wild fennel, Foeniculum vulgare, is a herbaceous plant born naturally in particular in the mediterranean regions and along the coasts. It is a perennial plant as well as spontaneous with branched stem up to 2 meters high and has green leaves similar to hay (from which derives the name of Foeniculum) and in summer it produces umbrellas with small yellow flowers. Wild fennel shoots are used as well as leaves, flowers and the fruits (incorrectly called “seeds”). Fennel “seeds” or small fennel are preferably harvested in late summer/autumn.

Thyme -The name of the genus Thymus for the botanist and Greek philosopher Theophrastus, means strength, courage, awakened qualities in those who smell its balsamic perfume. This species of plants Thymus vulgaris, originating in the Western Mediterranean, widespread in Italy especially in marine areas, where it grows in wild or cultivated here in the Mountain Region of the Madonie in Sicily.

Bay Leaves - Flakes - Laurel - Laurus nobilis, since ancient times has been known for its evergreen leaves considered the symbol of glory, fame, peace and protection. The evergreen leaves are due to its rich content of essential oils, present in its berries and leaves which are particularly rich in beneficial principles and aromatic essences, especially when collected during winter and early spring. And Agricola Filippone harvests the leaves in Spring during this peak time in the Madonie Mountain Reserves and it is then dried in the shade thus preserving all of its beneficial properties. Widely used in the Sicilian kitchen it is well noted on the list of traditional Italian agri-food products (P.A.T) and considered by the Ministry for Agricultural Food and Forestry (Mipaaf) as an inherent Sicilian product.

Oregano -Agricola Filippone oregano is cultivated in open fields and in high mountains (1000m from sea level), in the territory of Madonie Mountain Reserve. Origanum, in fact, originates from "òros" (mountain) and "ganào" (delighted); the most prominent interpretations bring the origin of the name to the concept of "mountain delight" or beauty, brightness, ornamental joy of the mountain. The Madonie lends itself to the cultivation of this special oregano and along with the Sicilian sun creates this unmistakable aroma and delicate flavor that is entirely different from the typical oregano sold in supermarkets.
